Last week at Junior Bootcamp we discussed breakfast, this week it is lunch!
Breakfast is often a meal I hear that is skipped:
Don’t have time
I’m fasting
Too lazy
I’m not hungry
I don’t know what to have..
And sometimes the choices are rather … let’s say not THE BEST. I am by no means forcing anyone to eat when they don’t feel like it, but I would like to share some really simple ideas for kids and not so little kids to have. I am all for easy and quick, unless I go out and have a meal cooked for me I am not a fan of faffing about for too long to cook any meal! If I look at a recipe with say over 10 ingredients and over 10 method steps, I am out!

Yogurt cups: Layer low-fat yogurt, fresh fruit, and granola for a tasty and protein-packed breakfast.
Whole wheat pancakes: Make pancakes with whole wheat flour and top with fresh berries and a drizzle of honey for a sweet and filling meal.
Breakfast burrito: Scramble eggs with veggies and wrap in a whole wheat tortilla for a portable and protein-rich breakfast.
Peanut butter toast: Spread natural peanut butter on whole grain toast and top with banana slices for a quick and easy breakfast.
Smoothie bowl: Blend frozen fruit, yogurt, and a little bit of milk to create a thick smoothie base. Top with granola, nuts, and fresh fruit for a fun and filling breakfast bowl.
Oats: Cook oats with milk or water and top with fresh berries, nuts, and a drizzle of honey for a warm and hearty breakfast.
Egg muffins: Mix eggs, veggies, and cheese and bake in a muffin tin for a protein-packed breakfast that can be made ahead of time.
Breakfast sandwich: Layer scrambled eggs, cheese, and bacon/ham on a whole grain English muffin for a satisfying and portable breakfast.
Breakfast quesadilla: Layer scrambled eggs, cheese, and veggies on a whole wheat tortilla and cook until crispy for a savory breakfast treat.
Banana pancakes: Mash ripe bananas and mix with eggs and a little bit of flour to create a naturally sweet and fluffy pancake batter. Top with fresh fruit and a drizzle of maple syrup for a delicious breakfast.
In a rush and want to prepare the night before?
Greek yogurt with fruit and granola
Hard boiled eggs and a piece of fruit
Homemade breakfast burrito with scrambled eggs, veggies, and cheese
Peanut butter and banana on whole wheat toast
Overnight oats with mixed berries and nuts
Cottage cheese with sliced peaches and a sprinkle of cinnamon
Whole grain English muffin with avocado and a poached egg
Smoothie made with frozen fruit, Greek yogurt, and spinach
Breakfast sandwich with bacon or ham, cheese, and whole wheat bread
Apple slices with almond butter and a hard boiled egg on the side
Don’t over complicate things. KISS- Keep It Simple Silly!…
